The Crispiest Gluten Free Baked Onion Rings (They're Vegan, Too!)

SUPER BOWL Sunday is upon us, and whether you're a football fan or not, you'll probably get roped into heading to a party where there will be tons of fried food with the potential to wreak havoc on your healthy New Year's Resolutions. The solution?No, it's not holing up in your room waiting for all the loaded potato skins and buffalo wings to go awayIt's these BAKED GLUTEN FREE VEGAN ONION RINGS. The key to the coating is cashew meal, which adds a delicious nutty flavor and, when baked, gets super crispy. Bring these to the game day party, and we guarantee they'll be a hit.

Crispy Baked Onion Rings (GF, V) 

Serves 15 - 20 onion rings

Prep Time 15 minutes

Cook Time 15-18 minutes


  • 1 large sweet onion, sliced in ¾ inch rings 
  • 2/3 cup gluten-free all purpose flour 
  • 2/3 cup vegetable broth 
  • tablespoons arrowroot flour (substitute with cornstarch) 
  • 1/2 cup corn meal
  • 1 cup cashew meal 
  • 1 teaspoon sea salt 
  • 1 teaspoon onion powder 
  • 1 teaspoon garlic powder 
  • ½ teaspoon oregano 


Preheat the oven to 425 degrees Fahrenheit and line a large baking sheet with parchment paper.   

Whisk flour, vegetable broth and arrowroot flour together in a shallow dish. These are your wet ingredients. 

In a separate shallow dish, whisk corn meal, cashew mealsea salt, onion powdergarlic powder and oregano until well combined. These are your dry ingredients. 

Dip an onion ring into the wet ingredients, completely coating, then dredge it in the dry ingredients, being sure to cover all sides. Place on your prepped baking sheet. Repeat this process until all onion rings are coated. 

Place in oven and bake for 15-18 minutes, flipping once after 8 minutes or so, until golden and crisp. Serve with your favorite dip (we love this healthy French onion dip recipe) or enjoy as is.
