Spring is officially here, and with that comes a plethora of new fresh produce selections. One of the best ways to get seasonal produce is at your local farmers market (it's also eco-friendly to shop local!). This spring, we're coveting ramps, a scallion-like root vegetable you'll be seeing more of in the coming weeks.
According to Epicurious, ramps are the first thing to pop up in spring. They're not only delicious, but healthy, too. Ramps are loaded with:
- Vitamin A, which is essential for strengthening eyesight and the immune system
- Vitamin C, which helps reduce the production of free radicals in the body
At first glance, ramps look partially like a leek, green onion, and spinach all in one. The flavor profile is also a combination of all three things. They're incredibly versatile. We recommend that you add them to your shopping list this spring, and try them with these recipes:
