Roasted Salmon with Fresh Mango Salsa

Spring is finally here, and we're pumped to start including spring produce like mangoes into our meals. This recipe for baked salmon with a fresh mango salsa is the perfect savory and sweet combination. Add a side of kale and you've got a nutrient-packed meal that's rich in omega-3 fatty acids and immune boosting vitamin C.

Roasted Salmon with Fresh Mango Salsa

Time: 35 minutes
Servings: 4 to 5

Ingredients:

For the Salmon
1 pound of fresh or thawed salmon
1 tablespoon olive oil
¼ tablespoon thyme
salt & pepper, to taste

For the Salsa
2 mangoes, peeled, pitted & diced
1 avocado, pitted and diced
handful cherry tomatoes, roughly chopped
¼ red onion, diced
2 tablespoons lime juice
salt & pepper, to taste

Instructions:
Preheat your oven to 375 degrees Fahrenheit and line a baking sheet with foil or parchment paper.
Place the salmon on the baking sheet and drizzle the olive oil over it. Sprinkle on the thyme, salt and pepper and bake in the oven for 20-30 minutes, until salmon is light in color.
Meanwhile, in a medium bowl combine mango, avocado, cherry tomatoes, red onion, lime juice and salt & pepper.
When salmon is finished baking, cut into single servings and plate it with a heaping spoonful of salsa.
