Nourishing & Energizing Breakfast Smoothie Bowl
Most of us would prefer to not eat vegetables for breakfast. However, this smoothie bowl, packed with vitamins from bananas, maca, and a shot of wheatgrass is right up there with having a bowl of greens.
With a 1:23 ratio of nutrient density compared to that of fruits and vegetables, wheatgrass is a superfood that can have a meaningful impact on your health. It can be energizing and is rich in antioxidants. I like to keep a bunch of the wheatgrass shots in my fridge and just pour one into my smoothie bowl in the morning. Try this recipe, and feel free to play around with the type of toppings you use. For fall, I like bananas, figs, coconut flakes, walnuts, and a sprinkle of chia seeds.
Energizing Smoothie Bowl
Ingredients:
- 1 frozen banana
- 1 tsp maca powder
- 2 tbsp powdered peanut butter
- 1/2 cup almond milk
- 1 shot wheatgrass juice
- 1 tablespoon collagen peptides (optional)
- ice
- sliced fruit & nuts for topping
Instructions:
In a blender or using an immersion blender, blend together frozen banana, maca powder, powdered peanut butter, almond milk, wheatgrass juice, and collagen peptides until smooth. Add a large handful of ice and blend until smooth. If the consistency is too thin, add more ice and blend.
Pour into a bowl, and add desired toppings.
