Chilled Asparagus Salad with Lemon Vinaigrette

Asparagus is one of those delicious vegetables that's only around for a short period of time in the Spring. Take advantage of the season with this simple, fresh salad that's great as a side dish or appetizer. And the bonus is you'll be fueling up with lots of fiber and vitamins A, C, E & K. 

Springtime Asparagus Salad 

Serves: 4

Time: 15 minutes

Ingredients: 

  • 32 stalks asparagus 
  • 6 tablespoons olive oil 
  • Juice of 2 lemons 
  • 2 teaspoons cumin 
  • Salt & pepper, to taste 
  • ¼ cup pine nuts 
  • ¼ cup crumbled queso freso 

Instructions: 

Fill a large pot with water and bring to a boil. Prepare an ice bath in a large bowl. Once water comes to boil, place asparagus in pot and cook 2 to 3 minutes. Immediately plunge asparagus into ice bath, allow to sit for a few minutes, then remove. 

Meanwhile prepare the dressing. In small bowl, whisk together the olive oil, lemon juice, cumin, salt & pepper. 

Arrange asparagus on a serving plate, and drizzle with dressing. Top with pine nuts and queso fresco.
