Our love of chocolate & ice cream knows no bounds. Without the fix, we're like the zombies on Walking Dead wandering around with an insatiable hunger—for dessert, that is. Not humans (let's be clear here). So what's one to do when you need a dose of the good stuff, but are trying your best to be healthy? The answer comes in the form of avocado.
Before you stick up your nose at the idea of avocados taking part in a sweet dessert, consider its light flavor that can basically be a palate for things like cocoa and its super creamy texture. Combined with coconut milk, agave or honey and a healthy dose of maca or cocoa powder, the avocado transforms into the chocolatiest fudge pop ever. Having just bestowed you with your newest summer jam, all we can say is, "You're welcome."
Vegan Chocolate Fudge Bars
Prep Time: 5 minutes
Total Time: 2 hours, 5 minutes
Yield: 8 pops
- 1 avocado, pitted and roughly chopped
- ¼ cup cocoa powder
- ¼ cup honey or agave syrup
- 2 teaspoons vanilla extract
- 1 cup coconut milk
In a blender or food processor, blend the avocado, cocoa powder, honey or agave syrup until smooth. Transfer to a large mixing bowl and whisk in the vanilla extract and coconut milk until well combined.
Pour into popsicle molds, insert popsicle sticks in each pop, and freeze for at least 2 hours or overnight.
