We've given potato salad a healthy makeover by replacing the mayonnaise for a zesty Dijon mustard vinaigrette and adding in lots of greens. Serve this fresh version all spring and summer long. It's great for barbecues, back yard parties and picnics.

Dijon Greens & Potato Salad
Time: 10 minutes
1 tablespoon Dijon mustard
¼ cup olive oil
1 teaspoon lemon juice
¼ cup chopped scallion greens
Salt & pepper, to taste
2 cups green beans, blanched
3 cups arugula
1 cup fingerling potatoes, boiled and sliced
In a small bowl, whisk together the Dijon mustard, olive oil, lemon juice, scallion greens, salt and pepper.
Place the green beans, arugula and fingerling potatoes into a large serving bowl and toss with the Dijon dressing to fully coat all of the vegetables. Serve immediately.
